Tasting Notes
‘The Siren’s Song’ Distilled in 2001 from refill American oak casks, finished in cognac casks, 54.6% ABV 18 carat gold in colour with khaki lights. On the nose it is mild with top notes of dried fruits suggesting dried figs and apricots or crystalised orange peel. Beneath this there is the dry scent of fruitcake, with notes of vanilla-scented marzipan. More buttery notes emerge with a drop of water, which also brings up the spiciness. Medium bodied, on the palate it is soft and smooth, an oaky-dryness at first, brings out layers of richly fruity flavour. Lusciously sweet green apple is enriched by exotic hints of grape and sweet coconut. The finish is long and warming, sweet and faintly savoury with a trace of ginger spice and the merest touch of smoke.
