Tasting Notes
In certain vintages a small portion of Dom Perignon is kept aside for extended ageing sur lie (over and above the 7 years for Dom Perignon.) The Dom Perignon Cellar Master will determine the release date of these wines when they are at their optimum, this can be between 10 – 25 years after the vintage. These wines are labelled Dom Perignon Œnothèque. The 1995 is a thoroughly distinguished Champagne. Bright and brilliant but not frivolous or light, this is deep, intense yet crystal clear, parading rich but crisply-defined red fruit characteristics together with notes of limestone, biscuit and smokey gunflint overtones. Absolutely stunning.
